Zucchini noodles are fast becoming one of my favorite side dishes for dinner. Somehow I believe I'm really eating pasta! Cook them in a little coconut oil for additional health benefits. Season as you like (I like garlic, salt, sometimes a little minced onions, and pepper) and throw in some crushed tomatoes and this dish is full of flavor! You could even try throwing in a little parmesan cheese! So good.
