I finally got my grandma’s peas and rice recipe and I was like DAMN, there’s so much flavor why the heck is rice not always made like this. It’s just so much better than plain old rice! You can use pigeon peas or kidney beans, just make sure the beans boil a bit first so they get soft. You should soak them for a few minutes too! Then add more water and half a can of unsweetened coconut milk and rice into that pot. And don’t forget the star of this dish, smoked turkey necks! Throw those bad boys in and eat them later! Bring to a boil and let simmer with seasonings such as scallions, onion, garlic, and thyme. Honestly the only thing I can apologize about here is that we ate the rice before I remembered to take a picture of it! Oops! I guess that’s how you know it was good ;)
