So yesterday my husband was making dinner. He recently came back from three months of military training on the east coast and he said he was making something he made back in training and it was good. So while I know my husband is a good cook, I wasn’t really sure where he was going with this meal lol. Well of course, it came out great! I was shocked, mostly because all of the ingredients sound like they could potentially go terribly wrong together but he somehow makes it work. So in a big pan he baked two mashed sweet potatoes, chicken he cooked up first in a pan, and cut up bell peppers and some onion. Kind of random right? I thought the sweet potato would be the bulk of the dish thereby making the whole thing just taste sweet, but I was wrong! It was so much more savory with just a hint of sweet. He also added some chili powder, seasoned salt, pepper, olive oil, and he loves an added sprinkle of brown sugar on top when he’s working with sweet potatoes. Oh, and I recently bought a fresh basil plant so he grabbed a few of those pieces and threw those in too. And those were actually some of my favorite bites. And there we are. Never judge a book by…it’s ingredients, maybe? You get my point!
