Well what would roti be without curry to go with it. So the same night (which was a celebratory election night dinner lol) that I made roti, I also made curry chicken. I got some baby potatoes chopped up, diced chicken, scallion, tomato, carrot, onion, and garlic together. Then I seasoned it all with salt, pepper, mrs dash (a Caribbean kitchen staple, the original), parsley, a little thyme if you like and lots of curry powder and Grandma’s Trini Pepper Sauce. Listen, when you think you’ve added enough curry powder, add a little more lol. Throw that all in a pot and let it simmer for a while until it’s cooked through and nice and juicy. I realized it’s nice to add a little water to the dish as it cooks down so you can still create a nice curry gravy and it won’t get dry. As always, season to your liking!
