So tonight we went for big pieces of Cod. Cod is actually such a nice fish because it’s so filling and healthy. If you look up cod recommendations they usually involve a butter sauce or just olive oil and tomatoes are often involved. So I wanted to try something like that. I like this recipe with a little extra salt and I think olive oil works as good of as butter. But my favorite part of this dish was the bursted cherry tomatoes! They go great with baked Cod.
Use softened butter and mix in parsley, salt, pepper, and minced garlic and rub it all over each piece of cod. Then throw on some cherry tomatoes, sliced or not.
Bake on 350 until firm and flaky! At least 25 mins.
Dinner is served!
