This one’s an easy one. Sometimes all it takes is an idea to jog your mind into making a good lunch. I don’t know about you but I often find lunch one of the hardest meals to come up with something for. So we had leftover steak from dinner and leftover shrimp from another dinner. I also picked up some balsamic vinegar from Sprout’s grocery store. So with our spring mix lettuce and the leftover meats, some organic cherry tomatoes, olive oil, pepper, and balsamic vinegar; voila, a nice filling and tasty salad! Enjoy!
*Pro tip: Enjoy it with a nice glass of white wine or Rosé ;)
